At one end, a celebrity wellness brand is unpacking bowls built around ingredients it certifies as clean. At the other, a space that sat dark for years is being fitted out with tabletop grills, wagyu platters, and a halal menu built for all-you-can-eat portions. Neither one is aiming for the crowd in between.
That gap matters more than either opening on its own. For years, the plazas along El Camino Real filled in with the kind of moderate, everybody-eats-here chains that define suburban North County: salad bars, casual Italian, family-style value dining. What is arriving in 2026 is not more of that. It is two bets on the far ends of the spectrum, and the space where the middle used to sit is the one still waiting for a tenant.
A Wellness Brand Finally Lands at One Paseo
Gwyneth Paltrow's Goop Kitchen confirmed its first San Diego County location at One Paseo in a June 4 announcement, describing the concept as a destination for "clean, flavorful, feel-good meals." The 2,562-square-foot space at 3725 Paseo Place sits in Building 8, next to Postino and Parakeet Cafe, and it marks Goop Kitchen's 11th location in Southern California and its first full-service, dine-in restaurant. Every prior Goop Kitchen has run as a delivery and takeout kitchen, with outdoor patio seating available at a handful of sites but no indoor dining room service.
The menu leans hard into restriction as a selling point. Dishes carrying the brand's "Certified Clean" label skip refined sugars, processed additives, gluten, dairy, seed oils, corn, and peanuts, built around bowls, salads, a whole organic rotisserie chicken, and a herb-roasted salmon plate. The chef behind the kitchen, Kim Floresca, has a resume that runs through Per Se, The Restaurant at Meadowood, and El Bulli, which is an unusual pedigree for a fast-casual brand.
Goop Kitchen is not stopping at One Paseo. Just over a week after the Carmel Valley confirmation, leasing documents showed the brand signing on as one of the first restaurant tenants at UC San Diego's new Triton Center, a $453 million campus development set to open in phases starting this fall. Across El Camino Real, an All-You-Can-Eat Answer
The former Souplantation building at 3804 Valley Centre Drive has sat empty for years, one of the more visible vacancies in Carmel Valley's retail corridor. That space is now leased to I Can Barbecue Korean Grill, an Orange County chain making its first move into San Diego County, with an opening targeted for mid-2026.
The concept runs on volume and choice. A standard tier gets diners into the all-you-can-eat rotation of grilled meats and traditional banchan. A premium tier steps up to Snake River Farms wagyu, including Kobe-style chuck eye, top blade, and sirloin picanha, alongside upgraded lamb chops and seafood. A third tier is Zabihah halal-certified across beef, chicken, lamb, and seafood, which is not something most Korean barbecue restaurants in this part of the county offer at all. Tables are built with gas grills so guests cook their own food, and the chain has leaned into robotic servers as part of the dining experience at other locations.
Two things are worth sitting with here. First, the site had been dark long enough that its emptiness became a landmark in its own right, the kind of storefront people use as a driving reference even when they cannot remember what used to be there. Second, whatever eventually fills a long-vacant anchor space tends to signal what a developer thinks the neighborhood wants next, and in this case that answer is maximalist, not moderate.

The Middle Ground That's Missing
Neither of these restaurants is replacing a moderate option with another moderate option. None of this touches the parts of Carmel Valley that run on a schedule rather than a leasing calendar. The Carmel Valley Farmers Market sets up at Torrey Pines High School every Sunday from 10:30 a.m. to 1:30 p.m., rain or shine, and it has outlasted every restaurant trend that has passed through the neighborhood's plazas. One Paseo's own programming calendar includes recurring movie nights, outdoor yoga, and live music on The Lawn, run on a schedule independent of whichever tenant just signed a lease next door.
A Free Makerspace Most Residents Still Haven't Used
The other fixture that has nothing to do with restaurant openings sits at the Pacific Highlands Ranch Library, an 18,000-square-foot branch that opened as a $28 million project and became the first new library location in the city of San Diego since 2019. Its IDEA Lab is free to any cardholder and stocked with 3D printers and scanners, a Glowforge laser cutter and engraver, a Silhouette Cameo cutting machine, a combination sewing and embroidery machine, and Mac stations loaded with the full Adobe Creative Cloud suite.
The lab does not keep the same hours as the rest of the library, which is part of why it stays under-visited relative to what it offers.
